About This Coffee

Most Robusta in the global market comes from newer commercial selections bred for yield and consistency. This legacy variety, Old Peridinia, comes from a multi-generational estate tracing back five generations, direct-sourced from a single family-farmed block along the banks of the River Cauvery in Kodagu (Coorg).

Old Peridinia trees produce naturally lower yields than younger commercial varieties. The trade-off is a denser, more complex bean that responds to controlled, anaerobic fermentation with a fruit-driven sweetness a standard washed Robusta cannot match. Juicy stone fruit and peach lead the cup, dark chocolate carries through the body, and the finish stays clean, a genuine departure from the harshness common to commodity Robusta.

Riverside Estate has farmed this land for five generations, since 1898, using soil-conserving, no-till practices that keep the riverbank ground stable year over year. This is specialty green coffee with origin-to-roaster traceability, graded and hand-picked, and fully traceable to the same estate-exclusive block along the river.

Kodagu, known widely as Coorg, sits in Karnataka’s share of the Western Ghats, a region whose elevation, river systems, and native forest cover have shaped one of Asia’s most established coffee growing districts for over a century. Riverside Estate is riverbank-farmed on the banks of the Cauvery at Siddapura, at 800 – 1,000 metres, where the river’s influence on humidity and temperature creates the consistent, forgiving conditions this legacy variety depends on.

The estate has stayed in the same family for five generations, since 1898. Owners Rishwin Devaya and Chummi Poovaiah grow Arabica, Robusta, and Excelsa under a native shade canopy of jackfruit, fig, rosewood, mahogany, and red cedar, an intercropped, biodiverse system managed with soil-conserving, minimal-disturbance practices that have shaped this land for more than a century of continuous stewardship.

Old Peridinia arrived in India from Sri Lanka’s Peradeniya botanical gardens during the Coffee Leaf Rust crisis of the 1800s, planted as a hardier stand-in for failing Arabica. Riverside’s original trees are still bearing fruit today, farm-identified with a full farm record, and traceable green coffee from planting to parchment, yielding less than modern varieties but producing a cup with far more depth.

Flavour Potential

India Coorg Peridinia Robusta Red Honey, Riverside Estate delivers one of the most distinctive, fruit-forward Robusta cup profiles available to Canadian home roasters. At medium roast, expect to unlock:

🍑 Stone Fruit –  juicy, upfront, immediate
🍑 Peach – soft, ripe, sweet
🍫 Dark Chocolate – rich base carrying through the body

Flavour potential is indicative only. Final cup profile depends on roast level and brewing method. Per SCA cupping standards.

The Anaerobic Red Honey process is responsible for this fruit-forward sweetness. Retaining a significant portion of the cherry mucilage during a sealed, oxygen-limited fermentation gives the estate precise, controlled fermentation over the final cup, encouraging complexity without the harshness open-air processing risks.

What Is Anaerobic Red Honey Processing?

If you are new to green coffee, this processing method explains why India Coorg Peridinia Robusta Red Honey, Riverside Estate tastes the way it does.

Anaerobic Red Honey means:

  • Cherries are hand-picked selectively at peak ripeness
  • The outer skin is removed through pulping on-site at the estate
  • A significant portion of the cherry mucilage is retained on the parchment, the Red Honey distinction
  • Beans are fermented in sealed, oxygen-limited vessels, the anaerobic distinction
  • Natural sugars in the mucilage build sweetness and fruit-driven complexity during fermentation
  • Beans are then dried with full mucilage contact for further sugar development

Why this matters for home roasters:

  • Builds fruit-forward sweetness a washed process cannot achieve
  • Controlled fermentation avoids the harshness open-air honey processing risks
  • Performs beautifully black or with milk

Roast Recommendation

Recommended Roast Range: Medium

India Coorg Peridinia Robusta Red Honey, Riverside Estate has a specific roast sweet spot. Medium roast is where this coffee performs at its best, balancing the stone fruit and peach character against the dark chocolate base without either element overwhelming the cup.

Roast guide:

  • Roast Level: Medium
  • Target Drop Temperature: 210°C – 220°C
  • First Crack: Allow first crack to complete fully before dropping
  • Development Time: 90 – 120 seconds after first crack
  • Colour: Medium brown, minimal surface oil

Tips for home roasters:

  • A medium roast is the sweet spot, stone fruit and peach lead, dark chocolate carries through the body, and the honey process sweetness comes through clearly
  • Pushed lighter, the stone fruit and peach stay bright but the dark chocolate base thins out, leaving the cup feeling less grounded and structured
  • Pushed darker, the honey process fruit-forward character flattens into generic roast char, you will lose the specific thing that makes this lot distinct from standard washed Robusta
  • This coffee performs well both black and with milk, the full body and retained sweetness hold up beautifully in milk-based drinks
  • Rest 5 – 7 days after roasting before your first brew for best results
  • Medium roast is where the balance holds, trust the process and resist the urge to push darker

Brewing Suggestion

  • ☕ Filter / Drip – clean, balanced, highlights the peach and caramel character
  • ☕ Pour Over – precise and rewarding at medium roast, bright and structured
  • ☕ Aeropress – concentrated, rich, excellent both black and with milk

Brewing tips:

  • Allow 5 – 7 days rest after roasting before brewing for best results
