About This Coffee
Most Robusta available to home roasters is grown at low altitude and processed fast, for volume rather than flavour. This award-recognized lot from Sandalkad Estate is grown differently, on agroforestry, biodiverse canopy blocks intercropped with arecanut, pepper, cardamom, and vanilla vines under a two-tier rainforest canopy.
Extended, controlled fermentation and slow drying, a post-harvest innovation developed at Sandalkad specifically for this lot, break down the bitterness and woodiness that define most commercial Robusta. The CxR variety itself adds to this smoothness, giving the coffee naturally lower acidity than standard Robusta grown at the same altitude.
This single-estate, multi-generational, family-farmed lot earned Fine Cup India Top 5 recognition, competition-grade confirmation of the quality behind the story. Farmed with soil-conserving, no-till practices, every batch is farm-identified and traceable green coffee back to the same rainforest-adjacent block.

Kodagu, known widely as Coorg, sits within Karnataka’s share of the Western Ghats. Sandalkad Estate takes its name from the sandalwood forest once found on this land, a rainforest-adjacent place shaped by altitude, shade canopy, and the humidity cycles of the Western Ghats monsoon. CxR is a cross between Coffea canephora and Coffea congensis, a wild species from the Congo Basin, and that parentage gives this Robusta a smoother, less bitter character than standard commodity varieties.
On the estate’s biodiverse, intercropped lower blocks, at up to 800 metres, the CxR grows among rows of arecanut trees threaded through with climbing vines of pepper, cardamom, and vanilla. Arabica takes the cooler ground higher up the same hillside.
Sandalkad Estate has been farmed by the Bota family and the Siddiqua family of the Navayath community for six generations, more than 170 years, a long-term producer relationship built on decades of trust and soil-conserving, minimal-disturbance farming. The extended fermentation used on this lot is a farm-level innovation the estate developed and refined itself, origin-to-roaster traceable from block to bag.
Flavour Potential
India Coorg Robusta Washed, Fermented Sandalkad Estate delivers a cup that holds its identity across a range of roast levels. At medium roast, home roasters can expect to unlock:
- 🍫 Dark Chocolate – deep, with warm spice underneath
- 🌶️ Warm Spice – vanilla and black pepper layered through
- 🪵 Cedar – light, woody, on the finish
Flavour potential is indicative only. Final cup profile depends on roast level and brewing method. Per SCA cupping standards.
Body stays full and structured, and the finish runs long and clean, without the harshness typical of standard commercial Robusta. A genuinely rare washed Robusta, grown and processed for character rather than volume.
What Is Washed, Fermented, Slow Drying Processing?
If you are new to green coffee, understanding this processing method will help you understand why India Coorg Robusta Washed, Fermented Sandalkad Estate tastes the way it does.
Extended Fermentation, Slow Drying means:
- Cherries are washed and fermented longer than standard commercial Robusta processing calls for
- This extended fermentation breaks down the compounds responsible for bitterness and woodiness in commodity Robusta
- Beans are then dried slowly, which keeps the green bean more stable and preserves aromatic complexity that fast-dried lots lose
Why this processing matters for home roasters:
- Produces a cleaner, more rounded Robusta than standard washed processing
- Removes the harshness typical of commercial Robusta grades
- Full body holds up well in milk-based drinks
- Well suited to medium and medium-dark roast programs, especially espresso
Roast Recommendation
Recommended Roast Range: Medium to Medium-dark
Medium roast is the best starting point for this lot. Dark chocolate and warm spice lead the cup, the body stays full and rounded, and the palate stays clean. This is where the extended fermentation shows through most clearly, since the bitterness and woodiness typical of commodity Robusta from this region simply aren’t there to begin with.
Roast guide:
- Roast Level: Medium to Medium-dark
- Target Drop Temperature: 195°C – 215°C
- First Crack: Drop shortly after first crack begins
- Colour: Light to medium brown, no surface oil
Tips for home roasters:
- Medium-dark roast brings the chocolate character forward and adds spice, with a longer, well-structured finish
- Pushed very dark, the chocolate and spice character trades away for carbon and the cup reads generic
- Pushed lighter, the acidity comes across sharper than this cup is built for
- This bean is denser than lower-altitude commodity Robusta, so it needs a slower ramp through the Maillard phase to reach first crack cleanly
- For espresso blending, 15 to 25 percent of this lot alongside a light-medium roast Arabica adds real body and crema
Brewing Suggestion
Once roasted, India Coorg Robusta Washed, Fermented Sandalkad Estate works well across brewing methods, with its full body and long finish especially suited to milk-based drinks and espresso.
Recommended brewing methods:
- ☕ Espresso – outstanding; full body, deep chocolate, strong crema
- ☕ French Press – rounded body, spice and chocolate come through clearly
- ☕ Filter / Drip – clean and structured, highlights the cedar finish
- ☕ Moka Pot – concentrated and rich, holds up well with milk
Brewing tips:
- Water temperature: 92°C – 96°C
- Grind: Medium-coarse for French Press, medium for filter, fine for espresso
- This coffee performs exceptionally well with milk, body and crema hold up beautifully in lattes and flat whites
- Allow 5 – 7 days rest after roasting before brewing for best results

Extended fermentation and slow drying give it a cup profile of dark chocolate, warm spice, and cedar, well apart from standard commercial Robusta. This lot was a Fine Cup India Top 5 award winner.
What does extended fermentation and slow drying mean for Robusta?
Extended fermentation breaks down the compounds responsible for bitterness and woodiness in commodity Robusta. Slow drying then preserves aromatic complexity and keeps the green bean more stable than fast-dried lots. Together, this produces a cleaner, more rounded cup than standard washed Robusta.
What roast level is best for India Coorg Robusta Washed, Sandalkad Estate?
